Mango Sherbet

I've been kind of sick of eating commercial ice cream and packaged cookies with my lunch lately.  Eating tons of that crap just doesn't feel right.  Intuitively I think to myself that, sure I might be able to get away with it - especially taking buttloads of minerals and putting blackstrap molasses in all my food, but ideal? 

One of the main objectives of RBTI is to maximize the amount of vitamins and minerals that you absorb.  One way of looking at it is that you can get away with eating fewer nutrients because your body is absorbing them so much more effectively.  That's cool and all.  But knowing that I'm absorbing my food better just inspires me to want to eat better food!  So I've been doing some typical health nerd stuff like juicing, and switching from commercial desserts full of refined sugar (Reams believed that most people couldn't handle more than 2 pounds of refined sugar per year - but he did have hypoglycemics eating pie and ice cream like there was no tomorrow) to mostly fruit-sweetened desserts like light ice creams and sherbets.

Anyway, I've really been enjoying my eating now that I've got my Vitamix and juicer back in my possession after almost an entire year of being separated.  So here's a little show and tell.  I have made two sherbets (by the way a sherbet is basically just a fruit-based frozen dessert with dairy fat added - like a light ice cream) so far - one with mango and the other with frozen bananas (no sweetener added).  I would like to make some with cherries or peaches or papaya in the future. Strawberries are not recommended for consumption on RBTI because the tiny, hard seeds get stuck in the colon.  However, one of Vitamix's sales pitches is that it is so powerful it can grind the tiny seeds in strawberries and unlock the nutrition in them - making smoothies and ice cream made with strawberries more nutritious.  This is debatable, but I may try that one some day as well.

  2. Sound absolutely delicious...you could even add some young coconut pulp as well. If you can find unfiltered grade 3 maple syrup which is way darker, it will boost your mineral content as well. I've made it so thick, you could turn the vitamix upside down and it won't pour out. Try making a caramel sauce with margarine?, I use coconut oil and maple syrup with a sprinkle of brown sugar. Bring to boil and add a pinch of baking soda and a dosh of vanilla. It will foam like heck and thicken. You can actually make toffee by baking it @ 200 for 20 min. Of course cool before using. As for measurements, I'm a fly by night but twice the MS to whatever fat you choose. I make about one cup with this. Cheers. HP

  3. I LOOOOOVE my Vitamix. Use it every day. Never made sherbert w/half and half, that's a good idea.

    We usually do the banana ice cream in the juicer, but I haven't made it since we got a Vitamix, I bet that would work well too.

    Today we are making ginger snickerdoodles w/ a whole wheat (ground in the Vitamix) white flour mix. And butter, darn it!!!!!!

    I have been eating frozen mango non-stop the last couple of days.

    This looks so good, as soon as I finish posting I am going to make some Mango Sherbert too. :)


    I did try lemon water again a couple of days ago. Not working.
    My brix fell, and I ate all day long fighting to keep it up. I never did reach 1.5. I was so full, and miserable too. :(

    Good news! I am up, and much more active. :) I went to Church Sunday. I walked a brisk mile Sunday, and again today. I also enjoyed grocery shopping, visited my daughter briefly, and cooked a good meal today!

    How did you ever get your kit to HI? Pike won't ship the chemicals. I can piecemeal the rest here.

    Got my refractometer, I get to join the pee party. Hubby borrowed one from work that was hiding in a cupboard. It calibrates differently, so when my Brix was -0.5 I was concerned. Proper calibration got it to 0.6, but I don't feel as shaky as the last few days. Interesting.

  7. Yes Troy, it was a gruesome workout opening up the door to the freezer at Costco... And then digging deep within to find the stamina to open the freezer at home AND open the bag...

    You mean your sugar levels are chronically low? I had no idea hahaha!!!

    Welcome to the pee party. No more water for you!!! Just juices! That is very low, so...

    1) No honey ever, not even traces of it.

    2) Dessert after lunch every day

    3) Some starches in the evening are fine

    4) Every time it's .5 or below, dissolve a spoonful of white sugar under your tongue

    5) Anytime it is .6-1.5, have 1-2 bites of fruit any time day or night it is that low

  9. Wait, are you saying you knew I was an irritable dizzy blonde full of pee and vinegar? Hmmm.

    So, should I be replacing as much water as I would drink with juice, or lower fluids overall? Cuz that's a lot of juice/milk.

    Post lunch I'm up to 3, (roller coaster whee!!!) and I was feeling better too. Post dessert was 4 (time for water!) and a sudden blast of heat. You're right, the refractometer alone is awesome. Sadly it's a lab one, so it only goes to 12, but I guess I can still squeeze my veggies and hope they're over 12.

    So why am I going thru these crashes when I was so stable before? Haven't been doing any kind of distilled or lemonade, just avoiding no's and switching meal times. Do potatoes stabilize you that much?

  12. Hi Matt,
    long-time lurker, first time commenter. I recently started measuring my urine with the refractometer. My readings tend to be in the 4 to 6 range in the morning and evening and between 1 and 3 anytime between 11 and 4pm, but there is a lot of variation. I went from a reading of 4.9 to 1.0 in a half hour once.

    From what I can gather, hypoglycemia and hyperglycemia are 2 sides of the same coin. For the most part, my numbers are on the higher end (4 to 6). So, I would assume my tendency is to hyperglycemia. Is frequent urination and lethargy also attributed to hyperglycemia or only hypoglycemia?

    If my numbers are high and I still have the urge to urinate, should I have a bite of fruit or tough it out? If drinking water lowers sugar, then should someone with high numbers drink more water in the evening?

    If the ideal number is 1.5, does that mean there should be no variation in the numbers or is it supposed to move up and down as the day progresses?

  13. I've never been able to get my vitamix to grind up berry seeds smaller than sand. But, you could probably add some yellow summer squash and carrots to your mango sherbert and not even notice.

    Glad you saw the humor in that. We watched it at least 6 times - just the last 25 seconds or so.

    Israel-

    In RBTI there are basically 3 categories, and please excuse the terms (-emia refers to blood and the refractometer isn't showing blood sugar content)...

    1) Hyperglycemia

    2) Tendency towards hypoglycemia (you - anybody below 5.5 on the first test)

    3) Hypoglycemia - Very low, with frequent crashes well below 1.5

    There are natural fluctuations. You can see the general daily pattern right there in your numbers - lower in the middle of the day. Hence the meal schedule - eating big during that time to pump them up.

    When you follow the program you will have some crashes. It's normal. And you don't even want to prevent the crashes per se. You just want to catch them, and provide a bite or two of fruit when it happens and stop drinking water until sugar levels are above 2.0 again. That's all. Very simple.

    I think overfeeding in general probably keeps sugar levels up. But that's not good either necessarily. It's probably better to be in the high range than to be chronically low all the time. But RBTI is a passport of having sugar levels stay in the right range with stability. At least that's the most sensible way of explaining it that I can come up with at my current level of understanding.

    My brix numbers are all over the place. I have been measuring them several times a day for the past couple of weeks. The thing is, I can't seem to find a pattern. In the beginning they went as low as 0.3 and now they have gone as high as 7? They don't seem to follow the curve Challen talks about?

Ok I hate to be a pain.....I think this whole RBTI focus is great, but what about those of us who can't afford a consulation or the equipment and also have been on very restrictive diets in the past? The whole appeal of this site for me was moving away from avoiding certain foods and being less strict. I understand people are saying that you can eat all types of foods but any plan where I have to drink 4 oz of lemonade every hour alternating with 4 oz of distilled water is kind of complicated to me. I work full time, I have a husband and kids and I have a busy life otherwise.....

  19. Violet....the pros outweigh the cons when all is said and done. The best thing to do is, focus on where you want to go rather than the obstacles you face. I haven't got a kit but am following the plan with results. The eating plan is easy and as for the water, get some large water bottles and just put the lemon in all of it. Don't get hung up on doing it with perfection, just do your best. You will have to "tweek" it according to your own personal responses anyway. If you have symptoms of low blood sugar, you may have to back off on the water. Listen to what your body is telling you.

    I'm so happy you were talking about Juicing in this one. I've scanned your archives for articles about fasting and juice fasting, and there's not much about the juice fasting. I started to do the Fat Sick and Nearly Dead juice fasting. did it for 10 days, lost 9 lbs. But I know that's just metabolic garbage. one week later the weight has not gone back up even though I'm eating more regularly, I want to integrate the juicing in my normal eating habits. But I wanted to see what you thought about the increased energy from juicing is that just sugar from the fruit. Is there dangers of muscle wasting? Is this an effective way to get vitamins and nutrients while it still decreases my over all intake of calories for eventual fat loss. or is eating a normal healthy diet while juicing still too much sugar and calories? And it seems to work well for upper body fat loss, not as much lower body fat loss.

  23. So I consulted with Challen today. He pretty much called out all my ailments- plus some I didn't know I had. Possible dementia in my future- oi vey!!!!

    Because of the strict guidelines with pork, my husband wonders if I am changing religions and wants me to get a t-shirt that says:

    I don't roll on Shabbos!

    Anyway- there is a lot to change and I am a little overwhelmed so I made my lemon water and went to the store to get some Haagan Daz and sweet potato fries. Haven't bothered to cut up the greens for salad. Will do that too....for dinner.....

  24. Wow, that looks TOTALLY AMAZING!!! I'm sure if I tried it though it would only end up being a mess.

    But some great news: I strongly believe that my teeth are remineralizing?! This after only about three weeks of RBTI and only following it very loosely, never been pH tested etc. I just noticed the other day that my teeth looked so white. I have upoaded some images on my blog.

    Yes, the doughy balding-ness is all taken place in the 8 weeks I've been RBTI... Naht

    I've lost a decent amount of fat actually, and have eaten Marie Challendars products on 4 occasions.

    That's not to say that I believe those products are healthy or even helpful. I think following the program with lots of "products" in your diet is a good way to have a great mineral supply and a great blubber supply long-term.

    Exactly. The lower the mineral supply the greater the fluctuations. I've never been that low or that high. I'm a 1-5 kinda guy. Generally 1-3 during daylight hours exluding first elimination of the day (which doesn't really count - "too concentrated" according to the WHIZard).

    It's more about flattening those fluctuations over time. With lower highs and higher lows. The more steady it becomes, the more energy you gain - as the story goes.

    I totally hear where you are coming from there. I still hope that many were able to get the message to not let their lives be governed by their diets, and move on with their lives. For many, that's appropriate.

    But then of course there are the people that are ill enough to not have much of a life, or at least have their potential to enjoy life hindered in some way. When I discovered the most sophisticated tool that I've come across to date, I had no choice but to bring it into the spotlight.

    Take it or leave it. It won't offend me either way. Like I've told many, just avoiding the primary energy loss foods (pork, nuts, chocolate, tea, shellfish, several other fish) and eating on the basic meal scheudle (no meat or sweets after 2pm) is enough to reap many of the rewards of the RBTI - unless you happen to be so ill as not need to follow it more carefully.

    Based on some old conversations, I think it's crystal clear that you display the typical pattern that Challen refers to as...

    "having your days and nights mixed up." or being "upside down."

    Your sugars have a tendency to dip, not as much from 11am-2pm, but 11pm to 2am, which is why you were up peeing for hours and couldn't go to bed until super late a while back.

  36. Raw Mango Sorbet is a cold, refreshing drink made from Indian raw mango pulp, jaggery and other spices to give it a sweet taste and strong desi. Summertime and mango are all on the street.

  37. They are much easier to work with / eating, without the stringy fibers. I prefer the taste and smell good boy Tommy Atkins, but not enough to deal with the fibers.
